VEGAN MOFO 2018: WEEK 3 ROUNDUP!

Hello, hello, hello! Welcome to this week’s Vegan MoFo roundup for budget week, where I’ll be looking at what tricks MoFoers have up their sleeves for cutting the cost of eating (and living) as a vegan.

Sunday 16th: Pantry Meal 

Sometimes a busy life or lack of funds can mean we have to make do with what’s in the pantry for a little while but that doesn’t mean it has to be boring or unhealthy food, as demonstrated by Amber from This Vegan Lyfe

I mean, just look at those omelettes! Such a cheap dinner to make but also easy, quick, healthy and by the looks of it, fudging tasty. I’m definitely making these next time I pick up some chickpea flour. Noms.

Another dish that caught my eye comes from Janyce at AfroVeganChick,  who made these ‘fish’ balls. Check out her blog for the recipe, I can see these being a great alternative to falafels in our house. Can’t wait to make them!

17th: Super Cheap Sweets

Maaaate. Check out this strawberry meringue dessert made from discounted strawberries by Just Blogs Vegan. As well as looking incredible, it probably costs less to make than the non-vegan version as it uses chickpea juice. Sorry, aquafaba. One of these days I’ll get used to saying aquafaba. Anyways. Vegan meringue!

18th and 19th: Leftovers

Emma from Walks, Talks And Eats made a batch of seitan sausages ready for this prompt, making two different meals from them. Of course you can make all sorts of dishes using sausages; casseroles, pizza, toad in the hole, pasta etc. With these beauties how could you not make hot dogs, though? I wonder if she might post some to me, I do love a good sausage.

Holy shiitake.  Gonna Go Walk The Dogs’ neatloaf recipe sure is golden. What a brilliant idea to make meatloaf in the air fryer, from leftovers! I know you’re meant to have neatloaf with ketchup but I can’t help thinking this would make an amazing roast dinner, smothered in gravy.

Go Vegga Makes the most of the last bits of produce in the fridge with this wonderful crisper drawer risotto. This is a perfect dinner to make with whatever veg you have at the end of the week,  and looks tasty as heck.

20th: Four for $4 (or £, or €)

Oh my days, check out this buffalo cauliflower, steamed potato fries with dill and lemon garlic tahini tartar sauce made by Libby (@gogreenly318). I mean, how good does this look?! A very creative use of humble ingredients and cheap to boot. Get in my face, immediately. Immediately!

My Cat Loves Daiya Shows us how to feed a family of 4 for up to $4 with a delicious bowl of stir-fried tofu and vegetables with rice noodles. This cost very little to make, is filling, nutritious and looks super tasty. I must remember to make more exciting stir fries like this, rice noodles are the bomb!

21st: Scratch and Dent

HahaVegan knows what’s up. If you’re skint then check what times your supermarket puts out it’s reduced produce, as it varies from store to store. I tend to go for the last one of the day (around 7pm in most supermarkets) as it’s the most they will reduce it by at that point. Our Marks & Spencer reduces stuff by up to 90%, and because they store their produce at cooler temperatures than other supermarkets, it’s still good for days! Anyhoo, check out their post about what they managed to find for some ideas of what to make.

Vegans need sauce’s Emily made an intriguing pizza with mushroom bacon made from discounted trumpet mushrooms, which is much cheaper than using store-bought vegan bacon. A great idea that I’ll be using next time I pick up a box of reduced mushrooms from the clearance section.

Another post I saw from today comes from @nomeatandthreeveg in the form of these warm pizza scrolls. Totally budget-friendly and great to put in lunch boxes for adults and kids alike.

22nd: Fancy but Frugal

Happy vegans Uses today’s prompt to make a gorgeous chocolate lava cake which I would love to cram into my face right now. Also, love the fork!

Hello, hello hello! Week three of Vegan MoFo was all about ingredient challenges! Here’s a look back at some of the posts that caught my eye this week.

October 16th – Survival food

Tracy’s living cookbook

Not gonna lie, when I saw the Zombie Apocalypse Cheesy Potato Enchilada Casserole Tracy made, I did a little squee. It looks absolutely delicious and is made from mostly pantry staples and freezer food. Bring on the impending doom, I’m going to Tracy’s for dinner.

October 17th – Let’s get boozy!
Go vegga

Kelly made this warming Spiked Maple Molasses drink with aquafaba whipped cream! I don’t know about you but this looks like the perfect Autumnal evening drink. Mmmmm, maple.


Ichiban vegan

Jess made a Boozy Apple Pie Sundae and it looks incredible. If you fancy making this homemade bourbon vanilla ice cream with hard cider wet walnuts, have a mooch on Jess’s blog for the recipe.

 

October 18th – Chocolate

One raw bite

Alexa and Jennifer over at One raw bite made a chocolate sauerkraut cake! I’m all for including more sauerkraut in my diet and if that can be done by eating cake, everyone’s a winner. Check out the origins of the cake and the recipe on their blog.

Kittens gone lentil

Susan has researched into truly fair trade chocolate and has been reviewing some beautiful looking vegan bars featured on the Food Empowerment Project’s chocolate list. Take a look at her blog post and read more about the Food Empowerment Project here.

 

October 19th – Five ingredients or fewer

Two Happy Rabbits

What a gorgeous dish Graeme and Cally made for today’s challenge, they even made their own pasta from scratch. Check out their recipe for Homemade Orecchiette with Broccoli Rabe and Chili, and try not to drool.

Vegan tho

Natalie made a vegan version of a childhood favourite dinner, Corned Beans Hash. This version using refried beans instead of corned beef looks so much nicer than the original, I’m adding this to my list of MoFo recipes to make on a cold, rainy day.

 

October 20th – Deconstructed dish

Angie took apart the ingredients for a banh mi and made a cracking salad. Just look at the grill marks on that tofu! Nom!

Emily made a gorgeous ‘unstuffed’ stuffed pepper: a beet ball atop a grilled slice of bell pepper with fresh herb gravy and a smear of roasted cauliflower puree. How delicious does that sound? And it looks impressive, too!

October 21st – Potato

Gonna go walk the dogs

Janet lives in California so has access to great produce all year round, as demonstrated in her Four Seasons Buddha Bowl, featuring slow roasted potatoes. Look at those beautiful colours! How dreamy does her Grilled Peach Tahini Sauce sound?

October 22nd – Unconventional grains

Kristy made a wheat berry salad with some lovely summery flavours, a nice change from a pasta salad and great to make in advance for meal prep.

Fake meat and true love

I’ll admit that I’d never heard of the grain Sarra and Mike used in their Italian wedding soup; triticale. They found this relatively unheard of grain at a farmer’s market, and enjoyed their soup with some rad looking ham & cheese buttermilk biscuits. What a perfect dinner! Save some for me next time, ok?
