As we round out our fourth week of Vegan MoFo 2014 I’m pleased to bring you another cookbook giveaway for Straight From the Earth by Marea Goodman, published by Chronicle Books.

-1Straight From the Earth is written by the woman who founded Earthbound Farms and is a vegan cookbook that focuses on using fresh produce. With recipes like Mixed Chicory Salad with Avocado, Garlic Croutons, and Pine Nuts and Cumin-Roasted Cauliflower with Carrots, it is an excellent cookbook to have on hand to use up some of those never-used-it-before veggies you get in your CSA box.

It’s not just veggies, though, as there are also recipes such as Raspberry Jam Thumbprint Cookies and Very Chocolatey Chocolate Brownies for your sweet tooth. With 100 recipes covering breakfast to dessert, this would be an excellent cookbook for someone who is veggie curious and looking to expand their diet. And what seasoned vegan can’t use more creative recipes for a perfect vegetable potluck dish?

  1. My favorite frag veggie is zucchin. This lovely green veg is so versatile can use in any course of your meal.

  2. NOTHING beats fresh cherry tomatoes from the garden! I refuse to buy them at the grocery store. You can just taste them mummifying.

  3. Such a tough decision, but I think in terms of eating something raw, my favorite vegetable is bok choy. I’d have said cucumbers, but technically those are a fruit… 🙂

  4. I love brocolli! Just a light steam turns it a gorgeous emerald color and makes it taste amazing. And it’s so versatile! Fry it, bake it, roast it, steam it, eat it raw, batter it, cover it in “cheeze” sauce. I feel like Bubba from Forrest Gump talking about shrimp. “You can bake it, boil it, broil it, saute it…”

  5. Favorite fresh vegetable is cauliflower; good eating raw or cooked. Versatile as everything from cauli rice, cauli nuggets to cauli steaks!

  6. I am a huge winter squash lover (pumpkins, delicata, acorn and the like), but I have also developed a newfound appreciation for cucumbers.

  7. My favorite veggie to eat fresh? Probably tomatoes. I could eat a good summer tomato like an apple. I’d say carrot or endive, but those I always dip into something. Tomatoes never need anything, they are perfect fresh!
