When I first made the transition from vegetarian to vegan, I did so with enthusiasm and excitement. I was already eating soy yogurt and drinking non-dairy milk, I had learned about vegan baking…and then I tried an not-to-be-named margarine that happened to be vegan, and I kind of halted, because it was not good. Now, i’m no Paula Deen with a stick of butter in every dish, but I like a little pat of it on my toast, in my oatmeal, with potatoes…it is definitely my fat of choice. For the first time, I was concerned that I was really giving something up.

Thankfully, I quickly learned about Earth Balance margarine! I believe my initial reaction to trying it was something like, ‘ohthankgod’. I had a delicious, buttery spread to carry me forward into my new lifestyle. And their line is always expanding! Not only do they have the buttery spreads and sticks, but they now have vegan mayo, soymilk, and nut butters. And of course, everyone has at least seen the pictures of everyone enjoying the new coconut spread at Vida Vegan Con, which is delicious on anything you would normally put butter on (try it on cornbread).

  1. I LOVE i mean LOVE using Earth Balance on my Sprouted Bread in the mornings!!!!!! makes for a great quick fix that’s taste so yummy!!!! i don’t know what i’ll do without my toast in the am with Earth Balance 🙂 SO HAPPY 🙂 not to mention…it’s awesome on baked yams 🙂

  2. oh man, earth balance is the best on cornbread! i like to melt a bit in the pan before pouring the batter in, then of course spreading some on after the bread is done baking.

  3. Garlic Bread: 1 cup Earth Balance, 1/2 cup olive oil, 1Tbsp oregano, 1Tbsp nutritional yeast, salt and pepper, 4 cloves of garlic (mashed). Mix it all and put on slices of french bread. 375F for 9 minutes. Eat!

  4. I LOVE baking with earth balance. When i can find it, I stock up and keep it in my freezer, it freezes beautifully. My mom’s homemade cinnamon rolls are what i use it in that i think are the best. Baking/cooking is my forte and Earth Balance is a key part of that:)

  5. I am a new vegan and Earth Balance has been heaven sent! I adore making tamales with Earth Balance and a little oil. Also, I love spreading it on crusty bread. Delish!

  7. I use Earth Balance on/in so much! Just yesterday I made an Indian dal that called for butter, and happily substituted Earth Balance, making it a vegan dish. Last week I made the Chocolate Pumpkin Loaf from the Post Punk Kitchen blog and ate it warm with just a bit of Earth Balance spread on it. It melted so nicely and gave that little bit of salty taste to the sweet cake. I just recently tried the EB soymilk and really liked it.

  8. I definitely go through Earth Balance phases. The ones where every day I eat an English muffin with EB and nooch for breakfast. We’ve all been there, right?

  10. earth balance shortening sticks for the best vegan pie crust ever and vegan buttery sticks to add to tofutti ‘creamc cheese’ to make the most excellent frosting to top a rockin’ vegan carrot cake. and, of course, organic whipped spread for bread w/ homemade preserves!

  11. Although we use Earth Balance religiously for grilled sheeses, mashed potatoes, baking and on pagnotta bread, the best thing to do with Earth Balance is to create Sun-dried Tomato butter to put on a baguette similarly to garlic spread. Awesome!

  12. Is it a recipe to say that I toast my Alvarado St bagel and then put earth balance on it and then cover it in tofutti cream cheese? I think so and it’s my favorite 🙂 Saturday morning, a bagel, grey’s anatomy on hulu. perfect.

  13. I use Earth Balance for everything… but my favorite is just with sprouted bread and a little bit of strawberry jam. Yum! It’s a good snack or breakfast 🙂

  14. My favorite recipe with Earth Balance would be shortbread; closely followed by butter cookies. These are recipes where the buttery taste of EB really shines.

  15. I’m an avid baker so I adore their buttery sticks. I also appreciate that they have soy-free versions of their products as well. My favorite way to use their buttery sticks is in bread or biscuits!

  16. In a bowl of oatmeal with a ton of cinnamon and a little agave. Mmmmm I love the vegan butter though lol I literally use it in every meal. Also delicious melted mixed with almond milk and nutritional yeast and poured over broccoli. Yum

  17. My favorite way of using Earth Balance is for frying wild mushrooms. A handful of chanterelles fried in Earth Balance with a side of toast is my idea of a perfect small meal.

  19. I use EB Buttery sticks and Shortening sticks to make the best pie crust ever. Although cornbread with EB spread is a pretty awesome close second.

    My cat Bijou is obsessed with Earth Balance. If she hears the toaster she runs into the kitchen and dances on her back legs until I give her a little piece of toast with EB. Dances I tell you!

  20. Hands down, my favorite recipe is making vegan vanilla frosting using Earth Balance margarine! It’s basic, but super awesome – I just Earth Balance margarine, soy milk and powdered sugar and I get this rich, smooth frosting that makes everything tastes better!!!!

  22. Earth Balance buttery spread is perfect for a roux!! I used to use oil, and that was ok, but earth balance made it a zillion times better!!!!!

  23. I made a simple pastry dough and rolled it out, folding it, and layering Earth Balance in between the layers, much like a croissant or puff pastry. I took the dough and sliced it, rolling it even thinner, and then wrapping it around small slices of Tofurky Kielbasa – it was the closest thing I’ve had to legitimate sausage rolls since I was an omnivore in Ireland. I cannot describe to you how indulgent, delicious, and fantastically evil the whole experience was. Oh my goodness, my mouth is watering just thinking about it!

  24. every christmas i wake up early in the morning and start making vegan cinnamon rolls from scratch. i blow through an entire box of vegan buttery sticks in no time for the cinnamon rolls, but it’s sooo worth it. they turn out ooey, gooey, and delicious every time. there’s no need for me to tell my guests they’re vegan, because they’re too busy coming up for a second roll. 🙂 my baking secret weapon is always earth balance buttery sticks.

  27. I’m not just saying this, but I just finished eating a big bowl of brown rice with chickpeas, broccoli, mushrooms, garlic and Earth Balance. I eat that almost every day, so the coupons would be great!

  28. Funny, I am about to write a post about one of my childhood faves which I made today for my kids. It is simple and unhealthy, but oh so yummy. Earth Balance and jelly on English muffins broiled until the jelly almost gets a little hard and sticks to your teeth. Don’t knock it until you’ve tried it.

  29. I love to use it on my homemade organic gluten-free oatmeal – Strawberries ‘n’ Cream or Maple Brown Sugar. It gives it that delicious buttery taste on top without worrying about animal fat or transfat but WITH all the comfort of knowing I’m getting Omega-3 fats! No cows suffer, I eat a delicious healthier alternative to animal-fat butter – everyone wins! Hopefully including me in this contest! 🙂

  30. I’m pretty sure we go through more than 12 Earth Balance containers a year, ha, which might not be a good thing. 🙂 I like chocolate chip cookies with Earth Balance. And one of my kids’ favorite snacks is toast with Earth Balance and hemp seeds.

  31. I’ve been using Earth Balance on everything for years now – I love it so much! You can literally replace butter with it in ANY recipe. How can I choose just one? What do I feel like right now? Hot soup with crusty bread spread with a mixture of earth balance and vegan parmesan and garlic – oh man that sounds good!!!

  33. Earth balance buttery sticks are (so much) better than any other margarine I’ve tried, especially for soups and sauces. I do a lot of Daiya cheese sauces which start with a roux, and Earth Balance is the only thing that will cut it. My favorite earth balance use is for Stovies; sausages and potatoes fried and simmered in beer until they caramelize. Stovies involve a ton of butter, and Earth Balance sticks are the only thing that makes the grade in the vegan version (http://micahludeke.blogspot.com/2011/03/stovie-recipe.html)

  34. Like so many others, I use it *in* everything, but it absolutely shines *on* things: noodles + veggies with nooch & salt & smoked paprika, toasted onion bagels, cranberry-orange muffins, a pile of mashed potatoes… you get the idea 🙂

  36. mmmmmm! Earth Balance! We like it on toast, vegan pancakes, to make vegan frosting for vegan cakes, you name it. We always have it in the house & don’t use anything else.

    sure wish I could find their coconut spread, though! We’d love to try it.

  37. It’s hard to pick a favorite. I love Earth Balance on fresh baked bread from my local CSA. I use Earth Balance in a lot of my baking, its perfect!!!

  40. I make breakfast every morning for the family using organic Earth Balance lovingly spread on toasted sprouted whole wheatberry bread then topped with nutritional yeast and smashed avocado. It is a fantastic combination.

  41. Coconut spread?! How did I miss that? Once I get my hands on that, I’m sure I won’t be able to live without it, just like every other Earth Balance product I’ve had. Find me a flat edible surface, and I’ll spread Earth Balance on it 😉

  43. i am about to make up a spiced buttercream frosting using earth balance to go on top of the pumpkin gingerbread that is in the oven. 😀 aside from that i only use it on… oh, EVERYTHING ELSE.

  44. Earth balance is such an essential ingredient in my baking but I’d say the best way to use it is spread on freshly baked bread. Simply so good. Even my non-veg husband and in-laws prefer to use earth balance now 🙂

  45. I developed a shortbread recipe using Earth Balance margarine and sweetened with dates instead of sugar. I’ll incorporate this new recipe in the second edition of my Bake With Dates cookbook.

I love Earth Balance in my peanut butter cup recipes..on mashed potatoes, bagels, in my noodle, cabbage, Apple Sage Field Roast “links” olive oil recipes, in my baking.. and all other places where butter might have once been loved (but animals more, so hello Earth Balance..so happy to know ye!)

  47. Earth balance on a piece of toasted whole wheat bread. I always forget how much I enjoy toast and earth balance. It’s one of the simplest things ever, and one of the most delicious!

  52. My favorite use for Earth Balance, other than toast and potatoes (which you totally need it for!), is coffee cake. It’s essential for that real coffee cake flavor and crumble topping. Yum!

  54. I LOVE baked sweet potatoes. I never thought I would find something that I like to eat on a regular basis as much as a plain baked sweet potato….that is until I tried baked sweet potatoes with earth balance “butter”!!! I literally just finished eating one. Also, nothing I have tried gives that buttery taste to homemade cookies like earth balance does! I don’t know what I would do without it!

  57. Earth balance makes a killer roux to use in my bechamel sauce and gumbo recipes. The new coconut earth balance is amazing as well- I spread it on bread when making a peanut butter banana panini, and it’s crazy good.

I was just going to buy some shortening and butter sticks tonight but decided against it in favour of going to the other store tomorrow where they’re cheaper — but now maybe I won’t have to even do that! My favourite use of Earth Balance is sort of a double whammy: homemade bread with shortening for the solid fat, then some butter slathered on said bread when it’s done baking. So good and so simple too! I can never get enough of either, haha. I also need to give a shout-out to Jess’s (of cupcakes and kale) French toast cupcakes with maple buttercream icing — the Earth Balance really makes that icing!

  61. this simple but delicious “recipe” melts my heart each time because it brings back so many wonderful childhood memories. i eat my smart balance on a russian dark rye bread sprinkled with sugar. best dessert ever. i remember playing with my brother and cousin, pretending to be a chef/waitress. i would sell my butter-sugar sandwiches to them 🙂
