Salad SamuraiWhen you are a vegan people ask you the same annoying questions over and over (ie Do you eat chicken?). But if you are a vegan that doesn’t like salad, let me tell you from first hand knowledge, that you are going to have some serious ‘splainin’ to do. People look at you, aghast, “But what do you eat???”.

Well folks, with this amazing new book by Terry Hope Romero I can easily answer now with salads like “Spring Herb Salad with Maple Orange Tempeh, or Deviled Kale Caesar Salad or Seared Garlic Chickpeas, Spinach, and Farro”. Terry’s book is full of recipes that I would actually not just eat but completely enjoy. The book has so many dressings like Chia Chipotle Dressing and toppings like Curried Cashew Pepita Crunch that you can add to any old boring salad you make to make it awesome too! Proteins like that 70’s tofu have been huge hits over on the PPK. And it’s arranged seasonally so you won’t be trying to use so-called “tomatoes” in the dead of winter. I am a salad hater no more!   1. Roasted beets sliced It’s actually 4 ingredients but I had to chose one and this is key to make it magic though maybe it’s the combo. This book looks amazing!

  2. Garbanzo beans & dried nuts. The combo actually for some reason tastes a little “eggy” and since I don’t eat eggs any more (but still miss the taste), it’s a welcome flavor addition.

  3. Miso – it makes a great savoury addition to a vinaigrette! (And I find it makes the oil and vinegar emulsify better) Also, any fruit adds an interesting and unexpected hit of sweetness (my new favourite is peaches!).

  4. Raw apple cider vinegar! It emulsifies with the hummus that I usually add and makes it so tangy! Lemon juice works, too, but I just buy jugs of the apple cider vinegar.

  5. I see repeats. Not sure how specific you have to be, but I always put fire-roasted corn on my salads!! Since someone already mentioned corn fresh off the cob, I’m not sure this counts. So I’ll add one: tempeh marinated in sweet chili sauce. Or did someone already mention tempeh? And just in case that was already taken, SPROUTS!!! Any kind. They always go on top of my salads 🙂

  6. Some of my favorite topping have been picked (fruit like cranberries/mandarin oranges/strawberries) but for a more savory salad I like to throw in roasted garlic. Thanks for the Giveaway!

  7. Salt and Pepper. It seems silly but so many people don’t salt and pepper a salad. I also like lemon but that’s already been used.

  8. Ooooh….OOOOH….BBQ sauce! I hate dressing, but make a salad with all the Midwest-lovin’ ingredients and top with BBQ sauce….oh man I’m salivating….
