For February’s MiniMoFo theme, we’re embracing all things fancy – whether that’s cooking a fancy meal, or whipping something up for the person you fancy! It doesn’t need to be a romantic meal, of course, we’ll take any fancy breakfast, brunch, packed lunch, dessert, or cocktail you care to show us, whatever the occasion or whomever you’re cooking for!

The first month of 2019 is over! We asked you your advice on beating the blues for this MiniMoFo – and you definitely delivered.

Nina has been cooking so much good food this month – check out her instagram for more! This is a frugal meal too – after using half a can of coconut cream for cupcakes, the other half went into this delicious soup.

Kira took on a project and made vegan pho – several steps and hours in the kitchen, but perfect to keep yourself warm and enjoying yourself on these cold days!

Start the day with a good breakfast, and you’re on track to a wonderful blues-busting day! This southwest cauliflower scramble is just one of Amber’s creations this month, and they all look delicious.

Jen took the “blues” prompt literally and made a granola smoothie bowl using blue spirulina, which gives it the beautiful blue colour! Featuring fresh fruit and homemade granola – definitely looks lovely!

Kirsty made stuffed carnival squash with veggies and rice, and a walnut dijon cream dressing – how good does that dressing sound?

Herbivore’s Heaven

Jenny isn’t feeling the blues herself this January, but kindly for those who are, she provided us with pictures of these gorgeous waffles from Puro in Prague. With baked apples, hazelnuts, maple syrup, and whipped cream – they’d definitely do the job.

Happy New Year, VeganMoFo’ers! We hope you will all have a wonderful 2019, full of happiness, good health, and all the delicious vegan food! We needed a bit of a break after September’s VeganMoFo, but we’re back in business and ready to revive our monthly MiniMoFo challenges – hopefully you’re all ready to cook along with us!

Our theme for January is Beat the Blues. January can be a tough month for people for various reasons, so let’s fill our social media feeds with tasty dishes to keep our spirits high! Maybe you’ll make something colourful to counter the grey weather (for those of us in the northern hemisphere, at least), or bake a delicious cake to boost your spirits if you’re returning to work post-holidays. However you’re beating the January blues, let us know!

Lets start with this really fancy spinach and walnut tart. How good does it look – like a sunflower! I know I’d end up in a tangle of pastry if I made it, so I’d be happy to be the friend it’s shared with!

Jen had a potluck with the Florida Keys vegan community and went all out for it – making special gluten free food seeing as one of the organisers has Celiac, read her blog and watch the video to find out all about it!

Who can say no to brownies? Sharing these “Ultimate Brownies” with your friends would be sure to make you a favourite. These are described as perfect for both the cake and fudge brownie lovers, which sounds pretty magical!

Downright Vegan

These are blueberry and lemon muffins, which sound like a brilliant combination. They take just thirty minutes from start to finish, which means you can go from zero to muffin in a super short time, perfect for last minute muffin emergencies!

Goodbye March! I think it’s felt like quite a long month – but on the other hand, I’m shocked it’s April already! We’ve done a quarter of the year already, wow! This month we gave you the MiniMoFo theme of green, partly inspired by St Patrick’s Day in the middle of the month, and partly because, we’re vegans, we should do green well, right? And we did do green well – here are some of the mouthwatering dishes you’ve shared this month:

One Sonic Bite

Have you seen any of Jennifer’s cocktails throughout VeganMoFo challenges? If not, go and check them out – she always comes up with a great vegan cocktail! And this one is no different – have you ever thought to try a grasshopper with matcha? No? Why not give it a go!

Continuing on the drinks theme, Susan made this Cherry Pie Green Smoothie from a recipe from Greenilicious, a cookbook written by yet another VeganMoFo-er! How cool is that? I’m intrigued by the sound of a cherry pie smoothie. She also wrote a review of the book, if you’d like to check it out!

Jen made a green grilled sandwich and did some green crafts (check out her blog for the crafts). This sandwich has organic greens, avocado, homemade pesto, pico de gallo, and vegan cheese in it. Yum!
