November MiniMoFo Round Up!

November MiniMoFo Round Up!

We’re happy to see that you weren’t too exhausted from VeganMoFo – lots of you embraced November’s lazy MiniMoFo theme!  Let’s check in on what’s been cooking!

@notfunatparties

Lazy food needn’t mean junk food – check out this plate of veg, rice and chick’n!  This is a lot more effort than I put in when I’m feeling lazy, so it’s extra impressive!

@vegan.raptor

Vegan Raptor took Ron Swanson for a lazy Sunday brunch. Ron has really come round to veganism – he looks ready to dive into those pancakes!

@dimsimkitty

MoFo regular Susan didn’t disappoint with this easy and delicious cheeseboard. Smoked sesame cheese sounds quite special, doesn’t it?!

@juli.ane_x

Juli travels like every Brit – too lazy to pack a lunch, you’ve got to treat yourself to a meal deal!  Fortunately Pret has plenty of options for the vegan on the go.

Coastal Vegan

Clare undertook some serious research into new ready meals from Waitrose in the UK – and one of them contains chicken pieces from the Vegetarian Butcher!  What a time to be alive!  Check out the full review on her blog.

@ladyfunk25

Angie has the right idea with this quick and easy stir fry made from whatever’s left in the fridge!

@veganistamama

Kimchi and black bean nachos sound extremely exciting!  Veganista Mama just threw these together at the last minute when she realised it was National Nachos Day – now that’s good improvising!

@vegfullife

Kristy made a big pot of goulash for her lazy meal!  This contains red lentil pasta, beefy crumbles and fire roasted tomatoes – it sounds absolutely delicious!

@ambereatsveg

Amber was feeling under the weather, so she was sticking to simple, lazy dishes, like this Asian coleslaw. Doesn’t it look sensational?!

@mosolyoga

This raw veggie bowl looks so refreshing – and so easy to throw together!

@pennyrakau

Doesn’t a fancy jar make all the difference? These PB&J overnight oats could be served in a fancy cafe, but Penny knows it takes mere minutes to whip up at home – including the homemade jam!

@mrs.spaetzle

Mrs S didn’t only make a lazy dish using whatever was in the fridge, she also invented a new meal!  Introducing “linner” – when you get home and it’s too early for dinner, but far too late for lunch.  We’ve all been there!

@twohappyrabbits

Our favourite travelling vegans threw this together on the road:  a tofu egg salad with pita, pickles and pea shoots!  Look at those vibrant colours!

@veg_domesticgoddess

Kira knows that lazy food isn’t just about having a hearty tempeh chilli in your freezer for emergencies, it’s also about minimising the washing up by using the same pan to heat the chilli and the quesadillas!

@veganfeastcatering

I can’t believe it’s still warm enough for ice lollies anywhere, but Janet’s proving me wrong by digging one of these blackberry and merlot pops out of the freezer for a lazy treat!

One Raw Bite

Jennifer’s lazy post was one that she hadn’t got round to posting for eight months!  This review of Philadelphia restaurant Circles appears to be worth the wait though – just look at the pad thai!

My Apologies for the Novel

I didn’t think anyone would manage to combine our MiniMoFo theme with Thanksgiving, but Julie proved me wrong!  Her post combines a quick and easy mac’n’cheese with a hearty Thanksgiving plate.  You can find out more on her blog.

Herbivores’ Heaven

There’s nothing better than a good lazy brunch, and over at HH you can read about not one but two all-vegan, all-you-can-eat buffet brunches!

Living the Dream @ Deer Run

Jen gives us another post-hurricane update along with a recipe for bread that’s so lazy, you can make it in your crock pot while you run around doing a million errands!

Not such a lazy month after all!  Thanks to everyone who has shared a recipe or picture this month.  Stay tuned for an announcement on December’s MiniMoFo theme!

November MiniMoFo

November MiniMoFo

You might be exhausted after a whole month of food blogging and snapping, but there’s no rest for the wicked:  MiniMoFo is back!  This time it should be easy-peasy though – you’ve got a whole month to make just one post, and the theme is:

Lazy!

You can interpret this however you like. It could be your favourite convenience food, your favourite spot for a leisurely coffee, a meal that your flatmate makes for you while you’re lazing on the sofa, your easiest recipe…so many possibilities!

Whatever angle you choose, just remember to use the hashtag #MiniMoFo on social media or post your link in the comments below, and check back at the end of the month for our roundup.

September MiniMoFo Roundup!

September MiniMoFo Roundup!

Who’s excited for October and VeganMoFo 2017? We certainly are! But, in the meantime we’re enjoying reading all this month’s MiniMoFo submissions. The theme this month, Literary Inspiration, was a tough one we know, but there have been some great submissions!

Ichiban Vegan

Jess at Ichiban Vegan took inspiration from the much loved Harry Potter series and made Hagrid’s rock cakes. She made them gluten, soy, and nut free too – so perfect for all the Hogwarts students regardless of their diets! There’s even a little photo tutorial showing you how to make them.

@ambereatsveg

Amber made a Peach Margarita Cheesecake inspired by Tom Robbins’ Still Life with a Woodpecker. I’ve never read the book, but this has certainly inspired me to pick it up!

@veganistamama

More Harry Potter now, as earlier this month VeganistaMama celebrated “19 Years Later” from the Harry Potter epilogue by making creamy onion soup and Irish soda bread and serving it in a Marauder’s Map mug!

My Apologies for the Novel

Julie took her inspiration from Terry Pratchett’s Discworld and made “Bananana Dakry” (as described by Nanny Ogg). Just like Nanny Ogg, she also drew a picture of her bananana dakry, make sure to go and check it (and her kitties!) out.

@veganfeastcatering

Janet from Vegan Feast Catering chose her favourite book as a cookbook, which may be cheating a little, but it works! Her current favourite cookbook is Bowl by Lukas Volger.

Herbivore’s Heaven

Jenny found a restaurant named after a character from Kipling’s The Jungle Book – Mowgli in Manchester! She had many different dishes, including this chip butty, which had sauce that was “pure fire” – sounds like a challenge to me.

Walks, Talks, & Eats

Another Discworld submission, this time from Emma who made Jammy Devils, also inspired by the same character as Julie – Nanny Ogg! These are little biscuits with different flavoured jam in the centre.

We hope you enjoyed this month’s MiniMoFo, and are on your way to being prepared for October and lots of amazing food! Keep checking back for giveaways, round ups, interviews and more.

September MiniMoFo

September MiniMoFo

It’s already September, meaning there’s only one month to go until VeganMoFo gets underway! To get you in the mood, here’s our new MiniMoFo challenge.

In September our theme is:  a meal inspired by a book you love.

And there’s a deadline this month – we’d love your submissions before 25th September, so we have time for a roundup before October comes around.

8th September is International Literacy Day, so we’re asking you to cook up something inspired by a beloved book.  Harry Potter fans, how about some vegan butterbeer?  Can you give Willy Wonka a run for his money and create a sublime chocolate concoction?  Show us what you’ve got!

As usual, remember to use the hashtag #MiniMoFo or post your link in the comments below, and check back at the end of the month for our roundup.

August MiniMoFo Roundup

August MiniMoFo Roundup

Summer is coming to an end, and here at VeganMoFo HQ we’ve been saying goodbye with some tasty outdoor eats in the last of the sunshine!  Let’s take a look at the highlights of August’s outdoor-themed MiniMoFo.

@oohsarracuda

Sarra knows how to start the day in style with breakfast and a good book in the great outdoors!  The bagel is spread with kale cream cheese – sounds good!

@things2eat

Here’s another MoFo’er who starts the day right!  A pineapple yoghurt bowl in the garden sounds as summery as can be.

@veganinbrighton

JoJo shared this envy-inducing grilled ham and cheese sandwich that she picked up in Melbourne.  Delicious!

@dimsimkitty

Sticking with Australia, Susan grabbed this BBQ mac and cheese burger from Brisbane vegan market. Can’t you just imagine how much mess this would make?! Something tells me it would be worth it though!

@diannewenz

Speaking of burgers that are both messy and delicious: how about this grilled portobello peach beauty from Dianne? You can find the recipe over on her blog.

@entropyandennui

Have you ever tried vegan lobster?! Follow Nicole’s lead and eat some of this in the sunshine!

Living the Dream @ Deer Run

Jen enjoyed this plate of vegan sushi in the great outdoors at a friend’s leaving party.  Check out her blog post to see the cupcakes she made and the gorgeous views!

@vegfullife

Tofu, corn and avocado on the patio?  Yes please! We’d be happy to have dinner with Kristy!

@juli.ane_x

Even if the skies are grey, the food can still be colourful! That peanut butter tofu looks delicious!

My Apologies for the Novel

Julie ate a lot of meals in the sunshine while road tripping to enjoy the solar eclipse. You can find lots more tempting photos in her blog post, but for now let’s all drool over this plate of rice and beans!

@ambereatsveg

Amber made the perfect picnic salad: beet, cucumber and radish salad with no honey mustard dressing.  Doesn’t it look fresh and colourful?

@vegansneedsauce

Emily is our kinda gal when it comes to road trips! This tofu tabbouleh, hummus, veggies and pita would definitely keep the hanger at bay.

@littlebitbakes

Birthday cake in the great outdoors sounds wonderful to me!  Vanilla bean or chocolate, everyone?

Herbivores’ Heaven

Jenny devoured a lot of outdoor food on a trip to a vegan-friendly market in London. Feast your eyes on this donut!

Walks, Talks & Eats

Emma made these choc chip cookies for a family party, and I can imagine they didn’t last long! Check out the recipe on her blog if you want to whip up your own batch.

@mrs.spaetzle

And finally, the most perfect outdoor food:  ice cream!  Mrs S. picked this one up in Vienna.

Thanks to everyone who participated in August’s MiniMoFo!  Stay tuned for September’s theme – the last one before the main event starts in October. If you haven’t already signed up for VeganMoFo, do it now!

August MiniMoFo!

July MiniMofo Roundup

July MiniMofo Roundup

July has finished already – how did that happen? We’re into August already, and just two months away from this year’s VeganMoFo, so don’t forget to prepare your cooking caps for that!

This month our MiniMoFo theme was BBQ, and here is some of the wonderful food you shared!

My Apologies for the Novel

july1

Julie at My Apologies for the Novel made Buffalo BBQ Chicken from The “V” Word (link to the recipe is in her post!). She says it turned out great – and it certainly looks tasty!

@rosamiex

july2

Rosie made a lovely colourful Korean BBQ sandwich with homemade pickled pink radishes – yum! Also, does anyone else have crockery envy for her plate?

@vegfullife

july3

Kirsty cooked a BBQ dinner with BBQ tofu, beans (green and baked!), and steamed corn. And watched a movie with it too – sounds like a great evening to me!

Herbivore’s Heaven

july4

Jenny posted a review of the Warehouse Cafe in Birmingham, UK, where they have a BBQ burger, which is topped with cheese, a grilled pineapple slice, and BBQ sauce.

@onewindowsarah

july5

Sarah blistered some shishito peppers to go with her spaghetti meal! I’ve never had shishitos before, but I’d be happy to try this meal for sure.

@ambereatsveg

july6

Amber’s feast, to celebrate an anniversary, had burgers, potato salad, beans, corn and unpictured apple pie. What a great way to celebrate!

Living the Dream @ Deer Run

July MM

July’s VeganMoFo’er of the month Jen didn’t let her raw diet get in the way of some grillin’ fun:  check out these delicious veggies!  You can find recipes and a video with more details over on her blog.

@helloseedling

july7

Jo grilled up some apricot – proving you don’t need to just go savoury for a BBQ! She says they “tasted just like candy” which is a great bonus for me.

Thanks to everyone who participated this month, and stay tuned for next month’s MiniMoFo!

July MiniMoFo!

July MiniMoFo!

It’s MiniMofo time again!

In July our theme is: BBQ.

We’d like to see your amazing vegan BBQ efforts.  If you’re enjoying some good summer weather, show us what your BBQ-ing in the great outdoors. If you’re not so lucky, show us what you’re grilling up in the comfort of your own kitchen!

As usual, tag us on social media with #MiniMofo and #VeganMofo, or comment on this post, and check back at the end of the month to see our round up.

June MiniMoFo Roundup

June MiniMoFo Roundup

In June we invited our wonderful vegan community to celebrate fruit, and you didn’t disappoint!  Here’s a roundup of the most mouth-wateringly delicious offerings we found.  As always, there was a strong showing on Instagram, so make sure you’re following all of our inspirational vegan ‘grammers!

@fifteenkeats

Over at VeganMoFo HQ we’re big fans of putting fruit on top of a treat and calling it healthy.  Jenny shows how it’s done with these pancakes.

Fruit 1

@vegansneedsauce

Fruit and pancakes were a popular combination, as demonstrated by Emily with these buckwheat and blueberry pancakes.  Yum!

Fruit 2

@rosamiex

Rosie also made her breakfast fruitier by adding frozen fruit to her breakfast bowl.  So refreshing!

Fruit 3

Herbivores’ Heaven

Jenny was too lazy to add fruit to her own breakfast, and instead relied on someone else to do it:  check out this banana bread and acai bowl.

Herbivore (3)

My Apologies for the Novel

Julie shares this delicious fruit smoothie, with a sneaky, non-fruit ingredient that you might not guess:  romaine lettuce!  If you’re intrigued, check out her blog post for more info.

Fruit 11

@littlebitbakes

There were also plenty of cakes with a fruity twist, starting with this chocolate-covered strawberry cake.

Fruit 4

Walks, Talks & Eats

Emma has provided you with the recipe for these strawberry white chocolate bars. Just look at that crumble on top!

Fruit 5

@heceme

And here’s a sensational chocolate and red currant cake with a chocolate mousse topping.  Can we have a slice, please?

Fruit 6

Living the Dream

Our blogger of the month, Jen, shares the recipe for Jamaican mango-banana muffins, made with local mangoes.  Living the dream, indeed!

@dimsimkitty

Unsurprisingly, strawberries were a very popular choice this month.  Susan showed them off on top of an elegant little flan.

Fruit 7

@veganfeastcatering

And speaking of elegant – could we interest you in this blackberry merlot sorbet?

Fruit 8

@juli.ane_x

And here’s another fancy dessert – these nectarines were caramelised with ginger wine and served with custard.  Incredible!

Fruit 9

@diannewenz

And fruity dishes aren’t always sweet, as Dianne showed us with this portobello peach sandwich.  Grilled fruit is perfect for summer!

Fruit 10

Veggies Save the Day

And here’s a fruity salad – you can find the full recipe for this watermelon tomato basil salad over on Amy’s blog.

Fruit 12

@helloseedling

And finally, here’s the next generation of vegans tucking into some fruit!

Fruit12

We hope you’re all happily tucking into some fruit whatever season it is for you right now!  Thanks to all our participants for brightening our days with these photos and recipes.

Stay tuned for our July MiniMoFo announcement, coming soon!

June MiniMoFo!
