VeganMoFo is over for another year – hands up if you’ve enjoyed it? We certainly have, and the quality of food posted this year has been as wonderful as we’ve come to expect from our lovely MoFoers. So sit back and enjoy reading this final week’s roundup!

Day 23 – Fancy AF!

You need to follow the link and read Libby’s description of this salad – it’s clear how much thought has gone into the creation of it! Including a lesson on the “mush factor” of salads, which I will now always analyse.

More salad today – it’s quite a fancy food it seems! This has vegan hoisin duck, five spice veg, lettuce, avocado, and kale, and certainly quells the notion that salad is boring – I’d happily eat this any day!

Ah, pizza. Pizza is the ubiquitous food, it can be both super casual, and lovely and fancy too! Lauren’s cauliflower crust pizza with olives and arugula falls into the latter category, and it looks so tasty.

Day 24 – Party!

Ok, here’s an aptly named instagram handle for today! I think however, this meal would certainly be fun at parties! Jenny’s theme this month has been to recreate burgers from the TV show, Bob’s Burgers. There have been some amazing creations throughout the month and I have serious burger envy!

Veganosaurus’ theme this month has been “Conscious Colourful Consumption” and this beautiful photo highlights just how colourful nature can be. Fresh pomegranate looking like a bowl of precious jewels – perfect for her theme!

Day 25 – Cook for your best friend

River has a confession to make, one that might make you very shocked…she doesn’t like pumpkin spice! However, apparently pumpkin is still good, so she’s made these pumpkin-vanilla cupcakes for two…and it does actually sound (and look) like a great combo! Just look at that crispy top.

Things 2 Eat

Moon cooked for her Mr, whose favourite food is Mac and Cheese. Good choice, Mr Moon! This is her butternut squash mac and cheese, with some kale thrown in for good measure. Mmmm!

Kira’s best friend is a picky omnivore – but that’s no problem when you can make food as tasty as this! She hosted a nacho party, which is possibly the best kind of party, featuring ancho lentil tacos and cashew queso. Oh yes!

Day 26 – Showstopper Dessert

I think we have discovered a vegan magician here, because this is none other than a vegan pumpkin spice souffle! Who says you have to miss out when you’re vegan? Not us!

Seitan Beats Your Meat

These might be the prettiest cookies I’ve seen. These are Italian Rainbow Cookies, and they are very showstopping. Look at the beautiful colours! And the chocolate!

Laura’s theme this month has been “Magical Unicorn Rainbow Party” which is as fun as it sounds! She has had some really great posts, covering some issues that need to be talked about too. Today, she made a bento box featuring rainbows and unicorns – how happy would you be if this was your lunch?!

Day 28 – Brunch

Julie made “quinoasage” which I don’t know how to pronounce, and potato tofu scramble. It sounds really good, and she did a little drawing of it too – she’s drawn a picture of each of her meals this month!

Day 30 – Holiday Test Run

Jennifer shared her very pretty looking cocktail shaker (but made sure to reassure us that it isn’t actually her most used gadget!). Go and check out her blog, where she has a recipe for a cherry cocktail that sounds oh so good.

Here we have a history of one of the most innovative recent vegan discoveries – aquafaba! Now, this is one that really gets people talking (especially non-vegans). It’s certainly pretty magical though – who would have imagined that vegan meringues could be this easy?

Angie’s secret ingredient is avocado…in a smoothie! It sounds strange when you first hear it, but actually makes a lot of sense. I mean, avocados are lovely and creamy, right? Apparently it gives the bowl a lovely rice pudding texture – this is one to try.

KZ’s tomato soup with grilled cheese looks so lovely and warming and comforting! It sounds like just the meal you want to cheer you up on a cold, grey day.

Now, how comforting does this recipe sound? Tofu noodle soup in homemade bread bowls. The bowls are best a few days old so they hold up to the soup better, which means they’re great for any bread you have leftover!

Continuing on the bread theme, we have a classic dessert here – bread and butter pudding! If you’ve never had it before, you should definitely try it! Sure, it sounds a little strange in principle, but it’s so good in reality.

Jenny has been spending VeganMoFo talking about being vegan in Italy (don’t you wish you had a months worth of Italian food to write about?!) and today has some really special gelato on her blog! With a bestselling book, Vegan Richa’s Indian Kitchen, under her belt, and hundreds more recipes on her blog, she’s become known as one of the best vegan bloggers out there. And did you know she participated in VeganMoFo herself for many years? You can find her VeganMoFo posts here!


Richa recently released her new book, Vegan Richa’s Everyday Kitchen, which you can find details of where to purchase it here on her blog. In celebration of that, we’re teaming up with the book’s publishers, Vegan Heritage Press, to give one lucky VeganMoFo participant the chance to win a copy! We’ve also got an interview with Richa herself to share with you. For competition details, see the end of this post.

First things first, welcome back to VeganMoFo, Richa! You participated in VeganMoFo for a few years in the early 2010s, do you have good memories of the event?

Absolutely! I had so much fun getting creative through the month, participating in the Chopped Challenge, and meeting so many bloggers. Its so great to find people who are vegan, and who cook amazing vegan food.

Your first book, Vegan Richa’s Indian Kitchen, was a huge success. Did you ever dream of being a cookbook author when you were younger?

I might have thought of writing fiction book but never a cookbook. I used to spend some time in the kitchen with mom in high school, when I felt like it and would mess up her recipes by adding my own spin. She would then make back up meals just in case  .

Do you have a favourite recipe, out of the ones you’ve published on your blog and in your books?

This is so hard to choose. I mean there are over a 1000 recipes now between the blog and the 2 books. It depends on the day, the amount of work I want to do and so on.

With food blogging, I often am cooking for the blog and trying out new stuff, so in general on an off day when I cook with leisure or if hubbs is cooking, we prefer simple Indian meals. Some Butter Tofu, Chard and peas and creamy sauce, Pasanda sauce with veggies, Rajma or Pindi Chole. On the weekend, I make a batch of my mozzarella (in the book) to make a margherita or top any other pizza. I have also been using Baharat and berbere blends in various new ways and loving the broccoli Baharat casserole from the book.

What would be your advice for someone looking to start cooking Indian food?

Buy my first book! Don’t be intimidated by Indian food. It is probably easy for me to say that, but Indian food has amazing options and so much is easily vegan or veganizable. The spices and preparation might be intimidating at first. But just pick up one recipe at a time, for which you have most of the ingredients and spices and go with it. Try it once, twice, thrice. It is just the initial hurdle of ingredients and newness. Once you start cooking some Indian dishes, its easy to get a hang of the style, timings, the spices needed and so on. The dish can always be adjusted during cooking.

Also, don’t let one recipe make your decision of whether you like Indian food or not. There are also many spices and flavors that make up a dish and one of them might not be to your liking. Or it could be just the wrong recipe. There are several different sub cuisines in Indian cuisine using very different textures and flavors, so you can hopefully find one that you love.

Your latest book, Vegan Richa’s Everyday Kitchen, has several chapters with different kinds of meals and cuisines. Which was your favourite chapter to work on?

Another tough one. I had fun making Burgers and Pizzas and the favorite was the Buffalo and Firecracker and the Masala Chapters. Spice + Heat! The buffalo chickpea pizza, Pecan lentil burgers, Baharat chickpea burgers, the deep dish pizza, lentil balls in butter sauce, firecracker crunchy salad…

You have so many recipes! How do you go about getting inspiration for them?

It is mostly organic. Someone will request a recipe that I haven’t put on the blog and I put my spin to it. I try new things at restaurants and something will pique my interest and I note the flavors and textures to make a similar thing, or just an idea of using the flavor combination or technique elsewhere. Sometimes the inspiration is seasonal, and I have this amazing produce or an amazing new spice that I should use in some ways and I will look up ideas on the web or make variations of my existing recipes. For me, it is easier to experiment with ethnic cuisines than everyday American meal options. The Burgers, Alfredo, desserts tend to be the ones that get a lot more searches on the web. So I look for inspiration from popular recipes and make my version of them as well.

What are your plans for the future? More cookbooks? Or would you like to go down the Isa Chandra route and open a restaurant?

Restaurants aren’t something I can do with my physical limitations. If anyone wants to open one with my recipes, then go for it. Cookbooks and blog are keeping me busy for now.

Fans of your instagram will have seen your stories featuring your dog. Tell us a little bit about him!

Chewie is a very loving dog who we adopted from a rescue many years ago when he was 3. He is 12 now, has slowed down and has opinions about everything. He loves to sleep, eat, sleep, cuddle and repeat. He is one of the reasons we went vegan. He has so much personality and so much love(and orders these days) to give.

Do you have any vegan heroes – people who’ve inspired you along your blogging and cookbook writing journey?

I have several people I look up do in different ways. People like Eileen Weintraub and Erika Abrams, who work with rescues and sanctuaries in India with a complex set of problems for animals there. People like Gene Baur who work in the field here and spread the message of the choices we need to make. My husband who constantly encourages me to put in my best at what I love to do. Blog readers who write to me about their journeys into eating more plants and eliminating animals from their plates. People who look at the current issues and problems in an open and clear way and work to find solutions and actions. Animals who survive after the many different ordeals thrown their way. I also take inspiration from great food, chefs, authors and bloggers, such as Terry Hope Romero, Miyoko Schinner, Isa Chandra.

Welcome to VeganMoFo 2017!

It’s October 1st, which means it’s VeganMoFo time! We hope you are really excited. Don’t forget to keep posting and commenting, and use the hashtag #vgnmf17 to show up on our instagram feed too.

Here’s a reminder of our weekly themes and daily prompts for you – though remember, they’re entirely optional, if you’d like to do your own theme or just go your own way, go for it!

Week 1: Changing Vegan Perceptions  (Sunday 1st-Sunday 8th)

1st: Re-inventing the veggie option – Think of a boring, bog-standard veggie option like nut roast or risotto and give it a makeover.

2nd: Junk food forever! – It’s not all kale chips and chia seeds being a vegan – show us your fave vegan junk food.

3rd:  But where do you get your protein? – Make a protein packed meal.

4th:  Catering – Improve on the worst catered meal (wedding, party, conference, etc) you’ve been served.

5th:  Conversion meal – What would you make to convince an omni to convert?

6th:  Vegan Cheese is “real” cheese! – Showcase your best cheesy dish.

7th:  Original vegan: Vegan meals that aren’t trying to replicate meat/omni ingredients

8th:   You do make friends with salad – A salad to win anyone’s heart.

Week 2:  Behind the Scenes: (Monday 9th-Sunday 15th)

9th:  Go go gadget – A kitchen gadget you couldn’t live without, be it a simple grater or a blender. Alternatively, use a gadget you very rarely use.

10th:  Secret ingredient – Is there an unconventional ingredient or product you use to make a certain dish that no one would suspect?

11th:  Kitchen tour!

12th:  Grocery store tips and tricks

13th:  Sell yourself  – If you were going to market a food  you make, what would it be?  How would you package it, and who would buy it?  (Or if you have already done this, tell us about the creative process.)

14th:  Repurposing food – Show us what you do with mushroom stems, stale end bits of bread, carrot tops, etc.

15th:  Spicy! – Talk us through your spice rack or cook with your favourite spice.

Week 3:  Ingredient Challenges  (Monday 16th-Sunday 22nd)

16th: Survival food – There’s a zombie apocalypse!  What can you make from just canned or foraged food?

17th: Let’s get boozy! – Food involving booze, like beer brats, Welsh rarebit or a boozy dessert. Feel free to make a non-alcoholic version if you prefer.

18th:  Chocolate – Today is Chocolate Cupcake Day, but you can make anything you want with chocolate!

19th: A dish with five ingredients or fewer (not including cooking oil and salt and pepper)

20th: Deconstructed dish – Hipster style food. Serving it on a slate is optional.

21st: Making the humble potato the star of the show

22nd: Unconventional grains – Cooking with freekeh, buckwheat, sorghum, etc – try something you wouldn’t usually!

Week 4:  Entertaining  (Monday 23rd-Tuesday 31st)

23rd: Fancy af – Dazzle us with your haute cuisine or gourmet dishes.

24th: Party! – Canapés, finger foods, something to share.

25th: Cook for your best friend – Tell us about your best friend and their favourite dish, make them a vegan version of it.

26th: Showstopper Dessert – Something that would earn a handshake from Paul Hollywood!

27th: Meals for the young (at heart)

28th: Brunch: the under appreciated get-together meal.

29th: History – What would you cook for your favourite historical figure?

30th: Practice run a dish for Thanksgiving, Christmas,  or another upcoming holiday

31st: Halloween – Try not to scare us too much with your spookiest dish.

This year, we’re trying to give you as many options as possible to follow VeganMoFo. As well as the RSS page, and the instagram feed linked to in our Blogroll Page, we’ve also put together an OPML file for you to download.

What this means is that you can import this year’s blogs into a blog reader – such as Feedly, and follow our blogs on there! Below, you’ll find the file itself, and a small tutorial on how to import this file into Feedly. You will need to create an account on Feedly in order to use that site!

  1. First, download the above file, and save it somewhere you’ll be able to find it later. Change its name, or leave it as it is, it doesn’t matter, so long as you remember what it’s called.
  2. Next, open up your Feedly.
  3. In the sidebar, click the green “Add Content” button
  4. Next, click the “Import OPML” button. 
  5. You’ll be taken to a page where you can upload the file you downloaded earlier. Do this, and it will import all the web blogs that are participating in this year’s VeganMoFo!

September MiniMoFo Roundup!

September MiniMoFo Roundup!

Who’s excited for October and VeganMoFo 2017? We certainly are! But, in the meantime we’re enjoying reading all this month’s MiniMoFo submissions. The theme this month, Literary Inspiration, was a tough one we know, but there have been some great submissions!

Ichiban Vegan

Jess at Ichiban Vegan took inspiration from the much loved Harry Potter series and made Hagrid’s rock cakes. She made them gluten, soy, and nut free too – so perfect for all the Hogwarts students regardless of their diets! There’s even a little photo tutorial showing you how to make them.

Amber made a Peach Margarita Cheesecake inspired by Tom Robbins’ Still Life with a Woodpecker. I’ve never read the book, but this has certainly inspired me to pick it up!

More Harry Potter now, as earlier this month VeganistaMama celebrated “19 Years Later” from the Harry Potter epilogue by making creamy onion soup and Irish soda bread and serving it in a Marauder’s Map mug!

Julie took her inspiration from Terry Pratchett’s Discworld and made “Bananana Dakry” (as described by Nanny Ogg). Just like Nanny Ogg, she also drew a picture of her bananana dakry, make sure to go and check it (and her kitties!) out.

Jenny found a restaurant named after a character from Kipling’s The Jungle Book – Mowgli in Manchester! She had many different dishes, including this chip butty, which had sauce that was “pure fire” – sounds like a challenge to me.

Walks, Talks, & Eats

Another Discworld submission, this time from Emma who made Jammy Devils, also inspired by the same character as Julie – Nanny Ogg! These are little biscuits with different flavoured jam in the centre.

Thanks to Tansy Rees Illustration (also find her on Instagram here) we’ve got a variety of vegetables you can use to show off your participation in VeganMoFo. July has finished already – how did that happen? We’re into August already, and just two months away from this year’s VeganMoFo, so don’t forget to prepare your cooking caps for that!

Rosie made a lovely colourful Korean BBQ sandwich with homemade pickled pink radishes – yum! Also, does anyone else have crockery envy for her plate?

Kirsty cooked a BBQ dinner with BBQ tofu, beans (green and baked!), and steamed corn. And watched a movie with it too – sounds like a great evening to me!

Jo grilled up some apricot – proving you don’t need to just go savoury for a BBQ! She says they “tasted just like candy” which is a great bonus for me.
