Gluten-Free & Vegan Bread: Artisanal Recipes to Make at Home by Jennifer Katzinger

If you believe in magic, then you will probably like this book.
You will also probably like this book if:

  • You like bread.
  • You like brand new books (this was released today).
  • You like beautiful books.
  • You like whole grains, but aren’t particularly attached to wheat, spelt, kamut, barley or rye.
  • You are gluten-free, or just want to let a little xgfx in your life.
  • You like free stuff.
  • You like the sound of Raspberry Rooibos Tea Bread.
  • You fancy yourself a bit of an artisan, and you may or may not be a wee bit fancy yourself.

I’ve been baking and baking from this all vegan and all gluten-free book for the last month, and I will gladly stand on the mountain top and testify for all to hear.  It’s one of my all-time favorites, ever.

It’s got chapters on all sorts of nifty breads including quick breads, yeasted breads, sourdough (yes xgfx sourdough–I told you it was special), flatbreads and batter breads.

It’s also got a super secret brand new xgfx technique for baking bread that works.

The publisher, Sasquatch Books, has offered one of our US or Canadian readers a free copy.  All you have to do is comment on this post to win!   I’m letting this offer run until noon PST on November 1st, and then I’ll pick a random entry.  It couldn’t be simpler.

Congrats to Krystyna who won this giveaway!

My ill-informed attempts at substitutions resulted in inedible wastes of expensive ingredients, so I gave up. I would love to try again.

  12. BREAD (staff of life) has always been the an essential part of my healthy VEGAN meals…
As a retired senior citizen on my path to being ancient, this book would be a blessing (vegan & gluten-free) to provide even healthier bread in my daily nutritional formula…

  15. Wow! As a gf/vegan in a traditional culinary school (Kendall college), this would truly be an asset for learning! I will begin bread making next quarter and would LOVE to show my Chefs some alternative baking methods- who knows? Maybe it can become part of the curriculum!

Best of luck to the others!

Thanks so much for the giveaway!

  17. I would love a copy of this book! My doctor just put me on a GF diet and I’m already vegan. This would be a huge help!

  18. I’ve just started experimenting with oat flour (how easy) and gluten free bread. I’ve yet made a loaf that resembles real bread. lol. I need all the help I can get and this book looks very promising!

  19. I have been a diagnosed celiac for 10 years . I love baking but have had trouble baking gf breads. As gf products are quite expensive I would absolutely love to learn how to make my own fresh bread at home! 😉 xo

  20. What a privilege it would be to win this book! Plus I love contests that don’t make you jump through 1,000 hoops just to enter. Thank you for that! 🙂

  21. I’m vegan and I can’t eat gluten! Please pick me! This book excites me sooooo much that I want to roll around and dance with happiness. <3

  22. Could use a free cookbook since we just lost our seashore house that has been in the family for generations to Sandy. And I think I’m having symptoms of gluten allergy (or some kind of allergy) recently. Maybe I’m allergic to Sandy.

    XOXO

  23. As someone who just had ridiculous amounts of tests to see if I have celiac or a gluten intolerance this book would be severely helpful. I’m vegan but I know nothing about gluten free eating, so it’s going to be a learning experience figuring out what I have to omit from my diet and what I can have. I love bread, pastas, seitan all sorts of wheat products it’s going to be interesting learning to adapt without them!

  24. I peeked at the amazon.com preview and it looks like an superdelicious book! Blueberry Streusel Bread, Cinnamon Walnut Loaf and Chocolate Orange Bread…Indian Roti, Injera and Irish Soda Bread. They’re rolling all over the planet…great stuff!

He bakes great vegan whole grain bread but hasn’t explored gf yet.
    Xo!

  26. This book looks SO exciting! I made vegan/gluten free chocolate cake last night that would have absolutely benefited from rooibis tea instead of water! What could be better than tea bread?? a.k.a vegan/gluten free tea biscuits!

  27. I have been essentially gluten free for more than six years and feel much better. I’d love to be able to bake my own bread. Right now, I’m using commercial gf brown rice bread. Hope I win!!

  28. I just baked my first gluten free bread during the hurricane on Monday from her book Flying Apron’s Gluten-Free & Vegan Baking Book that I took out from the library! This one would be my very own!

  29. At 52, I just celebrated my first year living a vegan life. It has improved not only my health, but also my husband’s, who has gladly come along for the ride (& that of our dogs, Roger & Mo, who have come to love kale & try to grab it out of the bag whenever I am putting groceries away!). I have never been much of a baker, but since I hate processed baked goods & vegan ones are not easy to find & also costly, I have started delving into VBL (vegan baking land) with tons of muffins! I have been very tempted to try bread baking, but have had some disappointing experiences which make me hesitate to try again… however, since I have fibromyalgia, which would benefit greatly from eliminating gluten, this book might just be the thing for me!

  30. Oh wow… my heart just about stopped when I saw this! lol I’d LOVE to have some incredible recipes to show my friends, family and myself that being diagnosed with a gluten-allergy is not the end of baking my own bread (or a death sentence…I swear, these guys lol).

  31. Trying to become vegan and having a husband with Crohn’s we are newbee’s at a Gluten Free cooking. As other’s express we are trying the store bought breads, crackers, chips but some leave us less than happy. Would love to learn from someone who has already gone through the tested and tried recipe’s journey and through a cookbook let’s the rest of us just turn to a page and get right at the cooking/baking. Would love this book and hope to win a copy!

  32. Now here’s a fascinating looking book. Artisanal breads have always been my favorite but I generally either end up with a brick or second day stale bird food. I’m also really glad to hear you’ve had so much success with this book as I tried some recipes from her first unsuccessfully. Seems like she’s got the mojo going. Now I’m getting visuals of hot sourdough bread spread with vegan butter. It’s pure torture. Make it stop! Send me this book! 🙂

    1. @ Kelly. Modern wheat does cause terrible bloating and many diseases. I have Crohns and stopped eating modern wheat 8 weeks ago. No more bloating! No more gut problems!

  33. Oh my goodness! That sounds amazing. Sadly I’m in Australia, but I have a gorgeous foodie friend in the states who would have a conniption if she saw this book. She love, love, loves cooking fancy breads and is a happy little vegetarian. I’m off to hunt down whether it will be made available about here. Thanks for such a great giveaway!

  34. I would love a copy of this book! I’m a college student and vegan and this cookbook sounds fabulous. I hope I win!!!! 🙂

    Good luck, everyone.

  35. Ther’s nothing like home made fresh bread but “modern wheat” is killing us all. I have been “modern wheat” free for 8 weeks and feel like a new person. Thank you for giving us alternatives!

  36. I am so excited to find out about this cookbook! I NEED it, so tired of making failed recipes and trying to convert GF recipes to vegan. Ugh. My entire family will be so thankful once I get this bread thing figured out.

  37. I seriously need this cookbook. I’ve had my share of baking disasters attempting gluten-free bread. This sounds lovely and like a real life saver!

  38. I’ve been vegetarian for 15 yrs and was diagnosed with Celiac’s 6 months ago and can’t believe how incredibly hard finding food that meets both criteria is, never mind being vegan. I’ve become quite the reluctant cook and baker recently and have yet to find a bread that really makes me think “ohhhh mmmm” rather than “well this is decent substitute” which makes me very skeptical to buy a book to try to make my own. Would love to win this so I can try and then recommend your cook book!

  39. I’ve avoided making my own gluten-free bread for a while because it normally turns out like a brick..haha. Here’s hoping the book will prove it’s possible to have great gluten-free, vegan bread – and get me back into the spirit of bread baking!

  40. This book sounds fabulous. It would be wonderful to learn the tricks, tips, and recipes for some great GF bread. I can’t wait to try the sourdough!

  41. This looks like a beautiful book, I would love to know more about baking for my daughter, who has allergies to wheat, egg, dairy and peanut.

  42. I’ve only been baking for a short time now, but I’m becoming steadily hooked! I would love to expand my baking library with this book! Thank you for hosting this giveaway!

    -Alexis, BK, NY

  44. This looks like a wonderful book!- A vegan who has been gluten free for 11 months and is quite tired of rice cakes and corn tortillas.

  45. I made a long way from Berlin to come and see this site – so this book just has to find it’s way to me :)))
Sunny greetings from over the ocean!
    Kay

  46. I looooooove bread! I would eat it for every meal if I didn’t cave to societal pressure to eat green things with vitamins in them. mmmm…

  47. Oh my god, I so need this book. I’ve been mourning bread like none other. My recently discovered wheat allergy sure has made life difficult. There have been upwards of 10 vegan-gluten-free bread attempts…all failures. Help!

  48. And I have it on good authority that I need this book! 😉

    1) It’s been on my Amazon Wish List since July (Obsessed but broke? Yes.)
    2) I just suffered through Hurricane Sandy – without even losing power – which means I deserve a prize. (Okay, not really a prize, but the ability to make bread for anyone who needs it now!)
    3) I don’t really have a #3, I just thought it’d look better to have a list of 3 things.

Thanks for the giveaway, Kittee, & congrats to whoever wins!

  49. Homemade vegan bread is wonderful, learning how to actually accomplish that feat would be outstanding. Beautiful cookbook that I would be so proud to own and make use of! Thank you for the giveaway!

  50. Would love this amazing book. So grateful someone finally came up with a double-wammy of a book, vegan and gluten free. My son has autism and I have gluten sensitivities. We became vegans 2 years ago. This would be wonderful addition to our home. Thank you for the opportunity to be a part of this giveaway 🙂

  51. This sounds like the perfect book!! I’ve been getting more gluten free flours to work with and I love baking bread, so this is exciting!!

  52. I LOVE VEGAN BREAD BAKING – My home is meat, dairy and soy free – with a propensity toward less wheat. This book looks amazing!

  53. I really need this book. There’s only one bread I’ve found that I can eat. Help me learn to make my own bread – please!

  54. Oo. I would love to win this. I bought my mom the vitamix dry blade attachment for her birthday (Today!), and would love to enjoy some of the delicious bread that I know she’s going to make with it. What a great looking book!

  55. Oh how I’d love to win this book! I’ve been gluten-free for 10+ years, but my hubby recently has to go gluten-free with me. He loves bread. We are both vegan, so this would be such a nice resource. It’s hard to find decent vegan, gluten-free bread in stores. Thanks for creating this and offering the contest!! 🙂

  56. You do not understand how many times I have attempted and failed at making gluten-free vegan bread. Like c’mon, just do me a wee little favour and rise at least once? …Nope. No rise. Just a dense, hard, rock-like loaf of brown rice flour. Seriously, you could severely injure someone with my loaves of “bread”. But, this book could be my saviour! Gluten-free bread recipes WITH NO EGGS! YAY!

  57. OMG holy heck this is so amazing!! A whole book of gluten free, vegan bread!!!!! If I don’t win I am running to the bookstore to get this! Thank you!

  59. Hi Jennifer,
I went gluten free a few weeks ago. I started to get sick throwing up all the time. Not able to eat anything. I can cook anything in the regular world without a recipe. I’m lost starting all a new just like a woman not knowing how to cook. I’m in a new world learning how to eat very healthy with new ingredients. Its a daily challenge that I am up to because I want to change the taste of gluten free to tasty, yummy where you can’t tell the difference between gluten free and normal. Choose me and I won’t let you down. In fact I have already made a shortbread. Cookie that tastes melts In your mouth.
    Have a sunny day!!! 🙂

  60. Gluten-free fad diets have recently become popular. A 2012 study concluded “There is no evidence to suggest that following a gluten-free diet has any significant benefits in the general population. Indeed, there is some evidence to suggest that a gluten-free diet may adversely affect gut health in those without celiac disease or gluten sensitivity.;

  61. Gluten is the composite of a gliadin and a glutenin, which is conjoined with starch in the endosperm of various grass-related grains. The prolamin and glutelin from wheat (gliadin, which is alcohol-soluble, and glutenin, which is only soluble in dilute acids or alkalis) constitute about 80% of the protein contained in wheat fruit. Being insoluble in water, they can be purified by washing away the associated starch. Worldwide, gluten is a source of protein, both in foods prepared directly from sources containing it, and as an additive to foods otherwise low in protein.,
