Thursday Round-Up: Second Annual Apple Post

Thursday Round-Up: Second Annual Apple Post

I can’t help it.  I have apples on the mind, yet again, during MoFo, and it looks like plenty of you do too.  For those of you who haven’t begun thinking of every possible way to use an apple, I provide you with this opportunity.

Of course, you have apple pie, done beautifully by veganwhore who pays homage to the best of the apple varieties, honeycrisp.

Aren't these hand pies adorable?

Next up we have these beautifully-crafted Mini Pumpkin Apple Pies with Coconut Creme from Kelly at the Vegan Cookie Connoisseur.

What beauties!

Check out The V Word for a savory apple dish: Onion and Apple Relish Tofu.

That tofu looks so crispy and delightful!

Jess at Cupcakes and Kale created something beautiful.  Wouldn’t you like to sink your teeth into one of these Apple and Salted Caramel Cupcakes?

Salty!

If it’s something savory you require, head on over to The Blooming Platter of Vegan Recipes for French Lentil and Apple Salad with Champagne-Dijon Vinaigrette AND Quick Vegan Tempeh Bacon.

You can always count me in for lentils.

Lastly, Suburban Vegan leaves us with Apple Cider Martinis.

Cheers!

I invite you all to put your thinking caps on and come up with more tasty uses for apples.  (Pretty please?  So I can work my way through the oodles of apples floating around my kitchen? )  Until next time, my friends!

Vegan Mofo Roundup: A Few of My Favourite Things

Vegan Mofo Roundup: A Few of My Favourite Things

As everyone gears up for the month long blogging extravaganza that is Vegan Mofo I found a few posts that were near and dear to what I love so much about the month of vegan food.

Kittens with purees and sausage in balls baked
Smart veggie verses and fresh pumpkin cupcakes
Free vegan giveaways tied up with strings
These are a few of my favorite things

Sausage Balls from the I-40 Kitchen. I like ballz and I like recipes that take old Southern favourites and veganize them. These are the sausage balls of my youth. Make a batch of 300 and take them to the family reunion.  John will be doing southern all month long, so you’ll have your choice of what to take to Aunt Edna’s 85th birthday shindig.

Humourous verses from Mr. Ape’s World of Crepes. There’s nothing like a good Vegetable Verselet for a Humorous Vegetarian. And if you remember me from last  year, you know I like animals in chef’s hats.

Pumpkin chocolate chip cupcakes at Vegan Food Rocks. This is one of my favorite cupcake recipes from Vegan Cupcakes Take Over the World. I have a can of pumpkin waiting to be opened so I can have my fill. The temperatures dropped about 20 degrees overnight, so it is time to get my pumpkin on.

Adorable wee kitten at Joyfulgirl’s Cupcakes and Crafts. Oh yes. The wee ears. The tiny paws. I love cats. I love cats looking at homemade pumpkin puree. Put a cat photo on your blog and I am there.

Giveaways all month at Miso for Breakfast! She had giveaways last year and she’s back again. Make some fava-cado dip, pull the cat into your lap and enter to win.

Let the fun begin! Happy Mofo everyone!
