Week 4 Roundup!

Week 4 Roundup!

That’s it! It’s the end of Week 4 and VeganMoFo 2018 has come to an end. How sad is that? I have to say, it’s strange not waking up to a new prompt and seeing what everyone else is making, but I’ve found so many new people to follow that I’m sure I’ll see plenty of great food throughout the year. How about you? Have you enjoyed VeganMoFo this year? Here are some of the highlights of Week 4!

Day 23: Sunday Dinner

@mosolyoga

Hungarian Sunday lunch! These are smoked seitan sticky BBQ ribs – and they look perfect for a Sunday.

@meettheshannons

This is one famous vegan roast – it’s been featured in Country Living magazine! And now it’s gone into my Sunday dinner plans…

@tofumom

Arroz con Gandules – or Puerto Rican Rice with Pigeon Peas – anyone else eagerly awaiting the recipe for this? It looks delicious!

Day 24: Pot Luck Perfection

@vegannotjustgreens

Lots of hotel cooking going on in @vegannotjustgreens VeganMoFo posts – something I’ve learnt a lot about now! This was for a potluck barbecue!

@carrotsrestaurant

Ok, how cool is it that we have a restaurant participating in VeganMoFo? And they make cakes as delicious as this!

Moving Scouse

Ever made sourdough bread? If you need tips, check out this blog post for some great ones. Anyone bringing bread as delicious as this to a potluck is my friend!

Day 25: Birthday Bash

One Raw Bite

What do you want for your birthday? Cake? How about a vegan hummingbird cake? Jennifer has been posting American Cakes this month, and this hummingbird cake – banana and pineapple, with a cream cheese frosting – apparently has a hidden history!

@valerieminne

Or how about brownie cake? You can’t go wrong with chocolate, and the crackly top on this brownie is everything brownie dreams are made of!

@atxvegans

ATX Vegans post vegan food from all around Austin, TX, and the surrounding area. And wouldn’t you like this pizza for your birthday? As someone from a country where we neither have tater tots or tater tot pizza, I’m intrigued.

Day 26: Favourite Holiday

@teaandsympatico

On Fridays, Caroline celebrates getting through the week by renaming it…Pieday! This must be my favourite holiday I’ve discovered through VeganMoFo.

@a.panda135

We love Isa here at VeganMoFo HQ, and her Dilly Stew is one of her best recipes! Amanda is thinking of putting this on her Christmas menu…we’ll be round!

@bigtentvegan

Would you just look at this thanksgiving feast! Wow! Hopefully you can draw some inspiration from this – vegan thanksgiving food can be pretty amazing.

Day 27: TV Trays

@bonnie_rabbits

Where would a TV dinner be without pizza? In the Netherlands, you can get vegan pizza at Dominoes – even with a little “I am vegan” sticker on! Perfect for a cosy night.

Plant and Vine

Kerrie shares her recipe for an easy chana masala – complete with wine pairing advice! Can you imagine tucking into this with a glass of wine in front of a good film?

T is for Triathlon

Cindy shared something that will really help a lot of vegans – how to make tofu, from scratch! She’s been posting a lot of how-tos throughout the month, so check them out.

Day 28: Prep-ahead Picnic

Kittens Gone Lentil

“Pretty in pink picnic” was the title of this blog post – and oh wow how pretty! With a reusable sandwich wrap, pink snack bar, pink drink, and pink kindle…yeah, this is pretty great.

@ms.spaetzle

Ms Spaetzle has been doing a pasta themed VeganMoFo, which is absolutely wonderful as you can never have to much pasta. Here is her prep ahead tortellini pasta salad for a picnic!

Green Gourmet Giraffe

Johanna got a public holiday because of the football, which is a fascinating idea, and made vegan chocolate pancakes – accidentally, because chocolate milk was all she had in the house. I say that’s a great accident. With strawberries too – delicious!

Day 29: Brunch & Munch

Plumes World

Today was brunch day, and of course a fry up was on the cards! Hash browns, beans, sausages, and veg – this looks like a great way to start the day!

@vegfullife

How lovely and tasty does this look? “No huevos rancheros” – tofu scramble, cheese sauce, salsa, corn tortillas, and refried beans, a delicious brunch!

Day 30: Kitchen Tour

My Apologies for the Novel

Is anyone else jealous of Julie’s dining corner? How cosy does it look! Click through to her blog to see the rest of the photos of her lovely kitchen.

My Cat Loves Daiya

So, I had no choice but to feature the kitchen that comes with a cupboard for the cat! And look at that judgmental gaze! Who better than kitty chef to tell you how to cook?

@twohappyrabbits

The Two Happy Rabbits are off on a nine month long road trip, so showed us their camper van kitchen! I’m always in awe of what they can cook with such a limited space. Check out their post for a detailed list of what they take.

And finally – our very own Herbivore’s Heaven has been cooking through recipes from this year’s VeganMoFo! Check out her blog post here. And don’t forget – if you make a recipe you found through VeganMoFo, let us know!

  1. thanks for including my pancakes in the round up – I didn’t follow the prompts but enjoy reading the round ups using the prompts – and thanks for another great round up to remind me that vegan mofo reading is never done – seems I still have a bit more to catch up on!
