Well, we are three days in and Vegan MoFo is off and popping like Lil’  Mama’s lip gloss.  There are so many delightful blog posts going on that it was hard to narrow it down.  In the end, I went with posts that truly made me excited.

Check out A Seasonal Vegetable’s raw carrot halwa.  Pistachios and goji berries lend bright, vibrant colors to the dessert.

This chickpea corn salad from Vanishing Veggie looks like the perfect thing to pack for lunch tomorrow!

Who could not love Floral Frosting’s pizza rolls?!  When I saw them, I had to do a double take.  Absolutely droolworthy!

Welsh Girl Eats shares her Wednesday meals, including this solid looking leftover salad.

Last, but not least, House Vegan spices up our lives with some delicious looking donuts.

Round Up: Comfort Foodie Friday

Check it.  I’ve had a rough month/week/day, so when I went looking for round up goodness…comforting foods just kinda spoke to me.  It all started with this beautiful Moroccan faux-chicken over at VegFusion.  Are you kidding me, son?!  I totally want to buy a clay tagine and make wonderful things in it now.

After seeing that delicious goodness, I found myself gravitating towards another one pot dish with Beedi’s Szechaun stir fry.  Apparently, Gardein aided in this festival of yummy.  Alls I know is that I was drooling and wishing I had all of the ingredients on hand.

As I was clicking through MoFo posts, I came across this loverly post on Fo Reals Life about slow cooker beans.  Now, it’s still 100 degrees here, but I am waiting patiently for the fall to roll in so I can bust out my crock pot and get my bean makin’ on.

And, of course, I’m not tryna talk comfort food without talking about pizza.  I was absolutely giddy when I saw this amazing sweet and spicy pizza from Wholly Vegan.  Are you for serious?  I need that thing in my mouth!

As my final reveal, I want to show this amazing salad from The Vegan Cookbook Aficionado.  Usually, I’d glare real hard like at anybody claiming a salad is comfort food.  But…this right here…this is so close to a taco salad that the Texan in me wanted to shed a single crystallized tear.

Howdy MoFos!  Mo here, and I’ve been thoroughly enjoying this seventh edition of Vegan Month of Food.  Today’s round up is brought to you by adorable foods.  Sometimes food just makes me squeal with delight.  Today, I found myself gravitating to foods that had pink and/or red in them.

Over at Vegan Bento Love, I found myself mesmerized by the cute baby pandas dancing around in strawberry fields!  And look at that tofu!  Yummers!

Something about strawberries was really catching my eye today, so I instantly fell in love with Luminous Vegans’ strawberry milk.  As a kid, that stuff was my jam!  This is so much better for you than the powdered stuff.  Plus, it’s oh-so-pretty.

Oh, and to prove I’m not just into strawberries, this cute looking bruschetta had me salivating.  Fig Lane says it has garlic, tomatoes, mushrooms, basil, chives, and hemp oil.  Mmm.

Okay.  I love me some beets.  I find using beet juice as a way to color pasta to be pretty freaking genius.  Check out Canned Time’s fresh basil beet pasta.

Finally, Glue and Glitter is speaking my language!  Girl is straight up making watermelon gin fizzes up in here!  Whaaaat?  You know that’s right.

When I was a wee vegan, the first thing I truly wanted to master was the art of making good cookies.  Don’t get me wrong.  Whole wheat, health food store, carob chip things are all good and well, but how I longed for a really good cookie.

Well, the world of vegan cookies has changed a lot since I first went vegan in 2001.  Now there are really good packaged cookies, an internet full of recipes, and Eat Pastry Cookie Dough.  Get right the heck outta town!  Vegan cookie dough!  Yessir/ma’am!

When I found out this was vegan, I was shocked!  I had walked by the cookie dough everyday at my job and had no idea.  Let me tell you…this stuff is great!  I would eat this from a spoon.  I would eat this on the moon.  This is so good straight out of the oven.  The perfect combination of crispy and chewy.

Okay.  So, I have always loved this time of year.  The air is crisp.  The sweaters appear.  Plus, everything is apples and pumpkins.  But my absolute favorite thing is eating hot food on a cold autumn day while snuggling with my dog.  Bring on the goodness!

Confident Cook, Hesistant Baker made me do a double take with these absolutely dreamy looking mashed parsnips.  I don’t even know if I’ve had or like parsnips, but I definitely need this in my mouth hole STAT!

If that wasn’t lovely enough, take a peek at the roasted tomato, artichoke, and chickpea sauce that Vegan Fazool made!  Totally droolworthy!

Ultimately, nothing says autumn like apples.  I could probably write an entire separate blog dedicated to the organic honeycrisps that I’ve been eating lately.  Jes adapted a recipe and created some killer looking spiced cider!

Amber made some delicious looking broccoli polenta cakes.  Broccoli. Polenta. Cakes.  With sauce!

 For true seasonal inspiration, you just have to see the crazy sauce that is Cadry’s Thanksgiving kebabs.  Greatness!

Hello fellow vegans!  Since I knew I’d have to do this roundup all late night styles, I decided to look at food that is best served in a late night eatery.  Can you imagine it?

For starters, it ain’t no stinkin’ diner without a little soup.  Kzcakestortellini soup and Jovanke’s pumpkin and leek soup caught my eye.  Nothing like a warm bowl of goodness on a chilly night.

 

If you decide “no soup for you”, why not pull a Benes and get the big salad?  Look at this beautiful salad from Becca Williams.  Roasted beets, apples, and cherry tomatoes?  Fork yeah!

 Of course, it’s not a fictitious late night vegan restaurant without that sammich action.  Weekly Vegan Menu is slangin’ cheese steaks.

If you like your late night food smothered in gravy, just check out what Sal  is doing to some mighty fine chickpea cutlets.

You know there’s no such thing as late night eating without a little dessert.  Take a looksie at this caramel apple pie from The Table Fort.  Drool.

Aww yeah, Mofos!  We are back for another live edition of round up goodness.  Truthfully, this one was inspired by one of the fellow organizers.  I saw the most amazing layered soul food pie ever at Kittee’s blog, and thought pie is a great thing to roundup.  So, let’s giddyup!

We’ll start with the savory.  Megan at The Vegan Cookbook Aficionado was throwing down with her rendition of Pâté Chinois, a French Canadian staple.  Just check out her sexy lentils.

There’s also no shortage of autumnal pies.  This is the time of year for apples and sweet potatoes and pumpkin! OH MY!

And lookit how cute Ashley’s sweet potato pie cups are!  So freaking cute!

Plus, Molly Alice Nests is flipping the switch and blowing my mind with these absolutely dreamy butternut squash pie bars!  So pretty.

Behold the versatility of pie.  The amazing Joni is tarting it up with her delightfully colorful avocado coconut lime tartlets, while Allyson lays down that sweet and salty caramel drizzle on her pear and ginger ricotta cheesecake.  Aww yeah.  Can we get some Marvin Gaye playing up in here?
