Final Week Roundup 2016

It’s December now, and VeganMoFo is over for another year! We really hope you’ve enjoyed this month and have both created and discovered lots of wonderful vegan food. It’s been great seeing people from all over the world post about veganism and vegan food all month long, and hopefully this month has inspired you to keep up the vegan eating!

For this final round up, I’ll include a mixture of posts that followed the daily prompts, and posts that didn’t. The prompts and weekly themes have proved an excellent way to keep things interesting and see how different people interpret them, but it’s also been fascinating to see others create their own themes and post food outside of the prompts! I’ll also include lots of posts, because it’s been very hard to choose and I’d like to showcase as much as possible!

Finally, we’d like to say thank you to everyone who participated this year – it’s been wonderful to get to know you all. This isn’t the last you’ll hear of us though – we’ve got some great plans in the works for VeganMoFo, so stay tuned and stay vegan!

Mm, don’t these pretzel tarts look amazing? Salted sweet treats are all the rage at the moment, and mixing crispy, salty pretzels with sweet creamy chocolate ganache sounds heavenly!

Ok, so how adorable are these elephant shaped gingerbread cookies from Elephantastic Vegan? And they match the blog name too! These cookies are made without molasses, which is great if you don’t like using it or find it hard to get hold of.

Jennifer over at SororiTea Sisters (what a great name!) has been blogging a month of vegan tea! For holiday baking day, she posted this “Chocolate Marshmallow Spicier Chai”, which comes with vegan white chocolate chips and vegan marshmallows – definitely sounds like something you’d bake!

Vegan Dollhouse baked this absolutely adorable Grasshopper Cake. The little kitty chocolates on the top are handmade – and flavoured with mint extract. This is definitely a very impressive holiday bake.

Rather than bake cookies or cake, Jobo baked lasagne! And Thanksgiving lasagne at that – with mushroom gravy, sweet potatoes, green beans, turkey spiced yuba, kale, and all topped with stuffing. Uhm, who is hungry right now? I know I am.

Amy from Veggies Save the Day (I’ve come across some great blog names this month!) plans to make this Creamy Sundried Tomato Pasta for Christmas. I’m never going to say no to pasta and this looks so creamy and tomatoey it’ll be just perfect for a special meal.

Curupita on instagram tested out this pecan pie from Whole Foods, which will form part of their family Christmas. How great is it that you can buy pies as delicious as this from shops these days?

NotJustGreens has been traveling for part of MoFo and came across a gelato shop with some wonderful vegan options – including this very seasonal candy cane gelato. Also pictured are peppermint mocha, lavender hibiscus, and coconut ginger. Don’t those flavours sound amazing?

Garrick has been posting some very innovative, delicious looking meals this VeganMoFo and this looks to be no exception. Apparently, their Christmas consists of mashed potatoes, gravy, and meatballs, which sounds pretty great to me!

Sarah posted her recipe for Easy Vegan Eggnog – I’ll leave you with a quote from her: “This creamy vegan eggnog is so thick that it basically requires booze” – yeah, that sounds pretty good to me. Made with aquafaba – the new vegan miracle food – this sounds like a great way to make a Christmassy treat.

Finally, our own Jenny managed to sneak one final post into VeganMoFo today (we’ll allow it!). She posts a monthly “Cookbook of the Month” and this month she used VeganMoFo as her own cookbook! Featuring recipes from MoFo’ers across the board her post shows just some of the amazing recipes which have come out of this month. If you’ve found any recipes you enjoy, or food which inspired you this VeganMoFo I encourage you to follow her example – let the author of the post know how it turned out and how you liked it, as it’s great to get feedback on your food, and it means you can keep in touch and find more great recipes!

Well, that’s two weeks of VeganMoFo done – are you enjoying it? This week has been amazing in terms of the great food and stories we’ve seen and heard shared by you guys! It’s been wonderful reading about food from your hometowns, and food from all around the world too, in International Week.

Next week is Rainbow Week and we’re looking to see plenty of colourful foods in the coming days.

Day 7: Close to Home – Make a food from your own country, state, or hometown.

Little Vegan Bear made this delicious sounding Lebanese roasted cauliflower salad. Roasting cauliflower is a wonderful way to prepare this vegetable, and this beautiful looking salad, with pops of colour from pomegranate seeds, promises to be very tasty!

Kelly shared a post with not only some beautiful photographs of Ireland, but these tasty looking Irish Potato Farls. She pictures them served with vegan butter and jam, but you can also have them as part of a full cooked breakfast – how good does that sound?

Tahini Kill

Renée wrote a wonderfully informative post about a food I had never heard about before – the bunya nut. Hailing from South-East Queensland, in Australia, these nuts used to be centre of Aboriginal Australian festivals, and each cone of nuts can weigh up to 10KG! The blog post features suggestions for cooking the nuts, as well as recommended reading on many topics including Australian history.

Day 8:  Far Away – If you dug straight down, where would you come out? Make something from that country!

Emily found out that if she dug straight threw the earth she’d come out near-ish Madagascar. She made a pumpkin stew with peanuts and an avocado salad – both of which sound lovely!

Shannon also lives the other side of the world to Madagascar! Her pumpkin stew with peanuts is called “Voatavo sy Voanjo” and also looks delicious, served with coconut rice. It’s great to see two different interpretations of the same dish.

My Apologies for the Novel

Julie dug straight down and came out in Australia, where she made Fairy bread. Fairy bread is white bread, (vegan) butter, and sprinkles. It is a very cute food! Julie’s blog also features daily cat photos which is always a good thing.

Day 9: Something Different – Cook a cuisine you’ve never tried before. Or, one you don’t make often enough.

Gonna Go Walk the Dogs

For a cuisine she’s never cooked before, this Ethiopian meal really looks tasty! Ethiopian cuisine lends itself to veganism well, and a meal may consist of several different dishes served on a bread called “injera”. Janet shares a recipe for berbere sauce, one of the mainstays of Ethiopian cooking, and recommendations for other Ethiopian dishes to make yourself.

Moon decided to cook Jewish food, and made an apple-cinnamon kugel. It looks like delicious comfort food – perfect for the winter months!

Vegan à Montréal

Babette from Montréal made mücver, which are Turkish zucchini pancakes, traditionally made with dill and parsley, and bound with chickpea flour. She served them with a very spicy harissa, tomato salad, and a cashew-yoghurt sauce. Looks good!

Day 10: Fusion Food – Take two cuisines and make them work together.

Tartes and Recreation

German contributor Sonja combined a Bavarian style strudel with an Oriental lentil filling, making a wonderful looking savoury pastry dish filled with lentils, squash, smoked tofu, and spices.

This British blogger brings us not one but two ideas for a fusion dish! Moroccan and Indian style ratatouille – or “rats” as it was called by their mother! The Moroccan twist adds apricots, almonds, ras-el-hanout and other Moroccan ingredients, and the Indian version has chilli, cardamom, potatoes and more. A very clever variation on a classic dish.

Vegan Pastry School

Jenny from Vegan Pastry School combined two American dishes – gumbo and Cincinnati chilli. Both dishes were new to her – making this fit today’s prompt and yesterdays too! Gumbo and spaghetti is a unique combination that actually looks really good.

Day 11: Favourite Cuisine – Where does your  favourite food come from?

Ichiban Vegan

Jess made this super cute looking Japanese omelette with mushrooms to showcase her favourite cuisine. Her blog post includes step-by-step photos showcasing how to make the omelettes (out of tofu!) which is really helpful.

Nicole enjoys Asian inspired food, such as this General Tso’s Tofu which looks amazing! A good portion of tofu surrounded by broccoli sounds like a delicious meal. More proof that tofu is most certainly not boring!

One Raw Bite

Alexa’s favourite cuisine is Japanese food, and she even has a “sushi wishlist” which sounds like a wishlist we should all have! She makes the observation that sushi is a bit like a tiny burrito, which I’d never thought of before but makes a whole lot of sense actually. Sushi is easily vegan friendly which is a great thing!

Day 12: Dream Holiday Destination – what would you eat on your dream holiday?

Kittens Gone Lentil

On the brilliantly named blog Kittens Gone Lentil, Susan writes about her love of the city Seattle. The blog post would serve as a wonderful guide to anyone wishing to visit Seattle – featuring brunch, sandwiches, pizza – and best of all, ice cream sandwiches!

Herbivore’s Heaven

Jenny went to Girona in Spain and writes up a great review of her time there. Girona has filming sites from Game of Thrones, apparently, so it’d be great for fantasy fans. The vegan scene looks pretty good too, if this croissant and hot chocolate is anything to go by – vegan croissants are always a bonus!

Day 13: Feed the Alien – An alien lands on your doorstep. What are they going to eat?

Tea and Sympatico

Tea and Sympatico has the brilliant idea of finding out where the alien stands on the matter of marmite. This is a divisive issue among humans, and shared opinions with the aliens could be the start of an interplanetary alliance! She makes croissants with her marmite – only taking fifteen minutes to make, so the alien doesn’t go hungry – brilliant!

VGNGF – Vegan, Gluten Free, Delicious

Lianne from Germany blogs about sweet potato toast! And this isn’t like avocado toast – where the avocado goes on top of toast, no, here, the sweet potato is the toast. And doesn’t it look good? Topped with avocado, tomatoes, pesto, and cashews, this is definitely one to try.

First Week Round Up of 2016

Week one of VeganMoFo 2016 is over! Hasn’t that gone quickly? We’ve seen some wonderful food this week and the rest of the month promises to be just as great.

The first weekly theme, for those who are following along, was Treat yourself (and others) and it’s certainly been a treat reading everyone’s posts this week. Below is a selection of our favourite posts from this first week of VeganMoFo 2016.  Make sure you’re following us on social media to see the posts we share and promote on a daily basis too.

Shaheen over at A2K likes to get back to her roots with a sensational Welsh menu when she’s out to impress.  She’s got laverbread, puddings, pies, and even a big tower of Welshcakes all ready to wow her dinner guests – not to mention some ferocious Welsh dragons!

Welcome to VeganMoFo 2016!

As a reminder, this year we’re giving you three options for participating:

1) Weekly themes (which will be listed below!). You can interpret these themes whichever way you like, and use them to inspire your posts!

2) Daily prompts (which will be also listed below). These tie in with the weekly themes, but give you more specific ideas to follow. You can use all of them, or just a few!

3) Choose your own theme. You don’t need to follow any of our themes if you don’t want to – come up with your own and use that instead! So long as it’s vegan, everything goes.

Throughout the rest of September and October, we will be issuing three MiniMoFo challenges – these voluntary missions will get your VeganMoFo wheels turning and get us all ready for the big event!

How it works:

  • We’ll share a challenge, you’ll have two weeks to make and share a dish using the #MiniMoFo tag on Instagram, Twitter, Facebook, or comment here with a link to your blog. That’s it!
  • We’ll feature your signature dishes as we go and do a round-up at the end of each challenge.
  • You don’t have to do the MiniMoFo challenges to participate in VeganMoFo.
  • You can participate in MiniMoFo and not in the full month.
  • No sign-ups are required!

Challenge 1: What is your signature dish?

Interpret the challenge prompt any way you like! What would “You on a plate” be like? What is your best dish? Make something with food that has your initials!

Don’t forget to use the #MiniMoFo tag when sharing your creation!
