July MiniMofo Roundup

July MiniMofo Roundup

July has finished already – how did that happen? We’re into August already, and just two months away from this year’s VeganMoFo, so don’t forget to prepare your cooking caps for that!

This month our MiniMoFo theme was BBQ, and here is some of the wonderful food you shared!

My Apologies for the Novel

july1

Julie at My Apologies for the Novel made Buffalo BBQ Chicken from The “V” Word (link to the recipe is in her post!). She says it turned out great – and it certainly looks tasty!

@rosamiex

july2

Rosie made a lovely colourful Korean BBQ sandwich with homemade pickled pink radishes – yum! Also, does anyone else have crockery envy for her plate?

@vegfullife

july3

Kirsty cooked a BBQ dinner with BBQ tofu, beans (green and baked!), and steamed corn. And watched a movie with it too – sounds like a great evening to me!

Herbivore’s Heaven

july4

Jenny posted a review of the Warehouse Cafe in Birmingham, UK, where they have a BBQ burger, which is topped with cheese, a grilled pineapple slice, and BBQ sauce.

@onewindowsarah

july5

Sarah blistered some shishito peppers to go with her spaghetti meal! I’ve never had shishitos before, but I’d be happy to try this meal for sure.

@ambereatsveg

july6

Amber’s feast, to celebrate an anniversary, had burgers, potato salad, beans, corn and unpictured apple pie. What a great way to celebrate!

Living the Dream @ Deer Run

July MM

July’s VeganMoFo’er of the month Jen didn’t let her raw diet get in the way of some grillin’ fun:  check out these delicious veggies!  You can find recipes and a video with more details over on her blog.

@helloseedling

july7

Jo grilled up some apricot – proving you don’t need to just go savoury for a BBQ! She says they “tasted just like candy” which is a great bonus for me.

Thanks to everyone who participated this month, and stay tuned for next month’s MiniMoFo!

June MiniMoFo Roundup

June MiniMoFo Roundup

In June we invited our wonderful vegan community to celebrate fruit, and you didn’t disappoint!  Here’s a roundup of the most mouth-wateringly delicious offerings we found.  As always, there was a strong showing on Instagram, so make sure you’re following all of our inspirational vegan ‘grammers!

@fifteenkeats

Over at VeganMoFo HQ we’re big fans of putting fruit on top of a treat and calling it healthy.  Jenny shows how it’s done with these pancakes.

Fruit 1

@vegansneedsauce

Fruit and pancakes were a popular combination, as demonstrated by Emily with these buckwheat and blueberry pancakes.  Yum!

Fruit 2

@rosamiex

Rosie also made her breakfast fruitier by adding frozen fruit to her breakfast bowl.  So refreshing!

Fruit 3

Herbivores’ Heaven

Jenny was too lazy to add fruit to her own breakfast, and instead relied on someone else to do it:  check out this banana bread and acai bowl.

Herbivore (3)

Fruit 8

@juli.ane_x

And here’s another fancy dessert – these nectarines were caramelised with ginger wine and served with custard.  Incredible!

It’s the end of May, and time for our monthly MiniMoFo roundup! This month, we asked to hear all about your favourites. It’s been great seeing the different interpretations of this prompt – from favourite foods, to favourite restaurants, and more.

@lisasprojectvegan

may1

For Mother’s Day, Lisa went to Modern Love Brooklyn, our very own Isa Chandra’s restaurant! It’s easy to see why this could be someone’s favourite place. Grilled asparagus with cashew hollandaise? Yes please! Check out her instagram post for photos of the other courses she had – all delicious looking.

@veganfeastcatering

may2

Where would a vegan be without their avocado? I’m sure it’s a firm favourite of many vegans and Janet from Vegan Feast Catering is no exception. Also, how perfect does this avocado look? Jealous here!

@things2eat

Moon’s account on instagram is packed full of mouthwatering meals, and her birthday meal is no exception (Happy Birthday!). She followed it up with a chocolate brownie, which makes it even better!

Herbivore’s Heaven

The first of this month’s sweet potato recipes comes from Sarah, who made a simple but tasty looking lunch, stuffing potatoes with arugula, olives, tahini, lemon, and hot sauce. Mmm!

Vegan Yack Attack

Jackie from Vegan Yack Attack also used sweet potatoes this month! She made burrito-stuffed sweet potatoes, filled with beans and rice, salsa, and guacamole. What a great idea!

Herbivore’s Heaven
